Cheesy loaded fries
  1. Heat the deep fryer to 175 degrees.
  2. Bring the cream to the boil and let the different cheeses melt in the cream, season with pepper.
  3. Salt will not be necessary as there is enough salt in the cheese.
  4. Peel and chop the red onion.
  5. Remove the seeds from the chilli and cut it into thin slices.
  6. Fry the fries for 3 min30 and drain well.
  7. Serve the fries in a sharing bowl, top with the cheese sauce and finish with the shredded red onion, the chopped chili pepper and the pine nuts.
  8. To give it a fresh touch, you can add some shredded coriander.

Loaded Cajun Fries

Cheese sauce :

  • make a roux with the butter, flour and the cold milk.
  • Make sure to stir well to avoid lumps.
  • While stirring, add the grated Emmental and the grated Pecorino and cook it well to make sure the cheese melts.
  • Season the sauce with salt and pepper, however be careful : Pecorino is a salted cheese. Add the juice of half a lemon to finish off the sauce.

 

Topping :

  • Chop the spring onion and the chili peppers.
  • Fry the Lutosa Cajun fries during 3 min. at 175°C. Let the oil drip off from the fries and than place them in an oven tray.
  • Top the fries with the cheese sauce in the middle and add around some pieces of Mozarella .
  • Place the tray during 3 minutes in the oven to have a light color on the cheese sauce. You can have the same effect using the grill.
  • Take out of the oven and dress with the chopped spring onion and chili peppers.
  • As a finishing touch, add the paprika powder

  2. Cook the shelled broad bean during 20 to 30 mns in boiled water
  3. Dice the tofu and fry it in a pan with some oil.
  4. Than garnish all the products in a bowl
  5. Ready to serve
