Potato croquettes with meatballs

Tomato Sauce :

  1. Wash the tomatoes and crush them then reserve in the fridge in a bowl. Peel the garlic cloves then chop two to put in a bowl and the other two garlic cloves in another bowl. Peel the onion and chop it.

 

Minced meatballs :

  1. In a large salad bowl, add the minced meat with a beaten egg then the two minced garlic cloves, the parmesan, the milk then the parsley and the breadcrumbs. Mix everything with a fork then salt and pepper to taste. Form small meatballs and place them on a plate in the fridge for 20 minutes.
  2. In a large saucepan or pot, heat the olive oil for a few moments then add the minced meat balls. Brown them on each side.
  3. Then remove the meatballs, put them on absorbent paper on a plate and set them aside.
  4. Put the chopped onion and brown it for a few minutes, stirring with a wooden spatula.
  5. Then add the chopped garlic cloves, add the crushed tomatoes, tomato sauce, tomato puree, oregano, salt and pepper.
  6. Add a glass of water, cover and simmer the homemade tomato sauce over low heat for 25 minutes.
  7. Then add the minced meatballs and cook for another 15 minutes until your meatballs in Italian tomato sauce are well cooked.
  8. Decorate your dish with a few basil leaves and a few slices of melted mozzarella.

Potato croquettes with fish

  1. Heat oil in a pan
  2. Cook the fish around 10 mns of each side. in a pan.
  3. In the meantime, cook the croquettes in a fryer : 4 minutes at 175°C
  4. When all is cooked, garnish your plate with the fish and croquettes
  5. then with the seasoned salad, lemon and radish.
