Mediterranean feta cheese stew

Ingredients

  • 1 clove of garlic
  • 1 red onion
  • 1 courgette
  • 1 aubergine
  • 1 red pepper
  • ½ glass of wine
  • 2 cans of diced tomatoes
  • Herbs of Provence
  • Lutosa Rustic Slices
  • 50g of feta cheese

Preparation

  1. Chop the onion and garlic and fry in a little olive oil.
  2. Meanwhile, dice the other vegetables and add them to the garlic and onion.
  3. Season with salt, pepper and herbs of Provence.
  4. Deglaze with white wine and add the diced tomatoes. Simmer for 10 minutes.
  5. Season to taste.
  6. Place the Lutosa Rustic Slices in a Pyrex dish, layer the stir-fry with the vegetables and place another layer of stir-fry on top.
  7. Crumble the feta cheese and sprinkle over the last layer.
  8. Finish with a dash of olive oil and a little coarse salt.
  9. Place in the oven at 180°C for 15 to 20 minutes.
