Vegan buddha bowl with the Cajun fries

Ingredients

  • 600g to 800g of Lutosa’s Cajun fries
  • 250g of firm Tofu, scrambled
  • 1 table spoon Cajun spices
  • 1 table spoon cornstarch
  • 4 tbsp sweet soja sauce
  • Olive oil
  • salt
  • pepper

 

For the avocado sauce :

  • 2 avocados riped
  • juice of one lime
  • 3 table spoon coconut cream or vegan Greek yogurt
  • ¼ tsp garlic powder
  • salt pepper
  • 400g of shelled broad bean
  • 300 g canned white beans

Preparation

  1. Cook the Fries during 4 minutes at 175°C in the fryer.
  2. Cook the shelled broad bean during 20 to 30 mns in boiled water
  3. Dice the tofu and fry it in a pan with some oil.
  4. Than garnish all the products in a bowl
  5. Ready to serve
